A heartwarming dish of crispy-skinned chicken thighs glazed with hot honey, served on a fluffy bed of rice, infused with lemon and thyme.

Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1/4 cup honey
  • 2 tablespoons hot sauce (adjust to taste)
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lemon, sliced
  • Fresh thyme sprigs (optional, for garnishing)
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Salt and pepper to taste for rice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the honey, hot sauce, minced garlic, apple cider vinegar, smoked paprika, salt, and black pepper to create the hot honey glaze.
  3. Pat the chicken thighs dry with paper towels.
  4. Sear the chicken thighs in olive oil until the skin is golden and crispy, about 6-8 minutes.
  5. Add the hot honey glaze over the chicken thighs.
  6. Place lemon slices around the chicken in the skillet.
  7. Transfer the skillet to the oven and bake for 20-25 minutes.
  8. Prepare the rice by bringing chicken broth and butter to a boil, then adding rice.
  9. Remove the chicken from the oven and let it rest for a few minutes.
  10. Garnish with fresh thyme sprigs and serve over cooked rice, drizzled with remaining glaze.

Notes

For crispy skin, always pat chicken dry before cooking. Adjust hot sauce for spice preference.
