Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Create the Marinade: In a bowl, mix together pineapple juice, soy sauce, brown sugar, garlic, ginger, sesame oil, salt, and pepper until well combined.
  2. Marinate the Chicken: Place the chicken thighs and drumsticks in a large resealable bag and pour the marinade over the chicken. Seal the bag securely and refrigerate for at least 1 hour, or overnight for the best flavor infusion.
  3. Preheat the Grill: While the chicken marinates, preheat your grill to medium-high heat.
  4. Prepare for Grilling: Remove the chicken from the marinade and set aside the marinade for basting later. Let the chicken sit at room temperature for about 10 minutes before grilling.
  5. Grill the Chicken: Grill the chicken for about 6-8 minutes on each side, basting with the reserved marinade until cooked through.
  6. Garnish and Serve: Once the chicken is beautifully grilled, remove it from the grill and garnish with chopped green onions before serving.

Notes

Marinate longer for a deeper flavor; overnight marinating is ideal. If you don’t have a grill, use a grill pan or bake it.
