A simple yet delicious date cake made with just four ingredients, offering natural sweetness and a delightful texture.

  • 2 cups Medjool dates, pitted and chopped
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup almond flour (or regular all-purpose flour)

Instructions

  1. Gather your ingredients. Preheat your oven to 350°F (175°C) and grease an 8-inch round baking pan or line it with parchment paper.
  2. Blend the almond flour and baking powder in a mixing bowl and set aside.
  3. Create a chunky paste by mashing the Medjool dates in a separate bowl.
  4. Whisk the eggs together in another bowl until frothy.
  5. Combine the date mixture with the eggs and mix thoroughly, then gently fold in the almond flour mixture until just combined.
  6. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
