A hearty beef stew made easy with the Instant Pot, featuring tender meat and vibrant vegetables in a savory broth.

Ingredients

  • 2 pounds beef stew meat, cut into chunks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions

  1. Sear the Beef: Set your Instant Pot to ‘Sauté’ mode. Add olive oil and beef chunks, searing them until browned on all sides. Once nicely browned, remove the beef and set it aside to keep the juices intact.
  2. Sauté Onions and Garlic: Add onions and garlic to the pot, sauté for a few minutes until translucent.
  3. Combine All Ingredients: Return the beef to the pot along with carrots, potatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir to combine.
  4. Pressure Cook: Close the lid and set the Instant Pot to ‘Manual’ mode for 35 minutes at high pressure.
  5. Release Pressure: Once done, allow for natural release for 10 minutes, then quick release any remaining pressure.
  6. Thicken the Stew (Optional): If desired, mix cornstarch with a bit of water and add it to the stew. Simmer on ‘Sauté’ until thickened.

Notes

Store leftovers in the fridge for up to 3 days or freeze for about three months. Adjust salt and pepper before serving for the best flavor.
