A hearty and comforting beef stew made quickly in the Instant Pot, filled with tender beef, vibrant vegetables, and rich broth.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and add olive oil. Once hot, brown the beef in batches, ensuring each piece gets a lovely golden crust. Remove and set aside the browned beef.
  2. In the same pot, add chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Return the browned beef to the pot along with sliced carrots, diced potatoes, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Stir everything together.
  4. Close the lid of the Instant Pot and set it to ‘Manual’ mode for 35 minutes.
  5. Once the cooking time is up, allow for a natural pressure release for 10 minutes, then perform a quick release.
  6. Open the lid, give the stew a good stir, and serve hot!

Notes

For enhanced flavor, consider marinating the beef in Worcestershire sauce overnight. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
