A quick and flavorful one-pot pasta dish made in the Instant Pot, perfect for busy evenings.

Ingredients

  • 1 pound pasta (such as penne or fusilli)
  • 4 cups water or broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Gather and combine ingredients: Add pasta, water or broth, olive oil, salt, garlic powder, Italian seasoning, and diced tomatoes to the Instant Pot.
  2. Seal it up: Close the lid and set the valve to ‘Sealing’.
  3. Pressure cook: Select ‘Manual’ or ‘Pressure Cook’ and set the timer for 4 minutes (less for thinner pasta).
  4. Quick release: When the time is up, quick release the pressure.
  5. Stir in the cheese: Stir in Parmesan cheese until melted and combined.
  6. Serve and garnish: Serve hot, garnished with fresh basil if desired.

Notes
