A warm, comforting potato soup made in an Instant Pot, featuring rich flavors and ease of preparation.

Ingredients

  • 4 cups diced potatoes
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Turn on the Instant Pot and select the ‘Sauté’ function. Add the diced onion and garlic; sauté until the onion is translucent, about 3-4 minutes.
  2. Add the diced potatoes into the pot and pour in the broth. Season with salt and pepper to your liking.
  3. Close the lid and seal the vent. Set the Instant Pot to ‘Manual’ and cook for 10 minutes.
  4. Once cooking is complete, carefully perform a quick release to relieve the pressure.
  5. Open the lid and stir in the heavy cream. Adjust the seasoning if needed.
  6. Serve hot, garnished with chopped green onions for a pop of color.

Notes

For added flavor, consider incorporating herbs like thyme or rosemary. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
