A tender and flavorful pulled pork dish made easy in the Instant Pot, perfect for gatherings and family dinners.

  • 34 pounds pork shoulder
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup barbecue sauce

Instructions

  1. Sauté the onions by turning on the Instant Pot and selecting ‘Sauté’. Add the olive oil, then toss in the chopped onion, cooking until it turns translucent and fragrant.
  2. Add the garlic and let it cook for another minute, allowing the rich scent to waft through your kitchen.
  3. Rub the pork shoulder generously with brown sugar, smoked paprika, onion powder, garlic powder, salt, and pepper.
  4. Sear the pork in the Instant Pot, cooking until nicely browned on all sides.
  5. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
  6. Cover the pressure cooker with the lid, select ‘Manual’ or ‘Pressure Cook’, and set the timer for 60 minutes.
  7. Let the pressure release naturally for 10 minutes, then perform a quick release.
  8. Remove the pork from the pot and shred it using two forks.
  9. Mix the shredded pork with barbecue sauce for a sweet and tangy finish.

Notes

Store leftovers in an airtight container for up to four days, or freeze for up to three months.
