A refreshing and colorful Italian Pasta Salad that blends fresh ingredients for a delightful summer dish.

Ingredients

  • 12 ounces pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, diced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Once it’s cooked, drain it in a colander and rinse under cold water to stop the cooking process. Let it cool while you prepare the rest of your salad.
  2. In a spacious mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced black olives, diced bell peppers, and diced red onion.
  3. Add the cooled pasta to the bowl with the veggies. Gently toss everything together.
  4. Pour the Italian dressing over the pasta and vegetable mixture. Toss again to ensure everything is coated.
  5. Season with salt and pepper to taste. Top with fresh basil leaves before serving.

Notes

For best flavor, prepare this salad a day in advance. Adjust dressing to preference.
