A classic Italian Pasta Salad bursting with fresh flavors, perfect for summer picnics and gatherings.

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions. Once al dente, drain and rinse under cold water to cool it down and stop the cooking process.
  2. Combine the Fresh Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, diced cucumber, red onion, black olives, mozzarella cheese, and chopped basil. Give it a gentle toss to mix everything well.
  3. Prepare the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well combined.
  4. Dress the Salad: Pour the dressing over the pasta salad and toss everything together carefully but thoroughly.
  5. Chill and Serve: For the flavors to meld beautifully, chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For best results, add the dressing just before serving.
