Ingredients

  • 8 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Once cooked, drain it and set aside to cool completely.
  2. Mix in a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, red onion, sliced black olives, cubed mozzarella cheese, and chopped basil.
  3. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well combined.
  4. Dress the pasta salad with the freshly prepared dressing and toss gently to ensure everything is evenly coated.
  5. Chill the salad for at least 30 minutes before serving to allow the flavors to meld.

Notes

You can make this salad ahead of time, but add the dressing just before serving for optimal freshness.
