8 ounces cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
3 whole jalapeños, seeded and diced
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
12 sheets egg roll wrappers
12 strips bacon
1 tablespoon vegetable oil
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped green onions, diced jalapeños, garlic powder, salt, and black pepper. Stir until the mixture is smooth.
Lay one egg roll wrapper flat on a clean surface.
Spoon about 2 tablespoons of the cheese and jalapeño filling into the center of the egg roll wrapper.
Fold the bottom corner of the wrapper over the filling, then tuck in the sides. Roll up tightly and seal the top edge with a little water.
Take one strip of bacon and wrap it around the filled egg roll, securing the ends underneath.
Brush each bacon-wrapped egg roll lightly with vegetable oil.
Place the bacon-wrapped bites seam-side down on the baking sheet. Bake for 20 to 25 minutes, or until crispy.
Remove from the oven and allow to cool for about 5 minutes before serving.
