A vibrant dressing made with fresh carrots and ginger, perfect for salads and marinades.

Ingredients

  • 200 grams carrot, peeled and chopped
  • 50 grams onion, chopped
  • 20 grams ginger, peeled and chopped
  • 1 clove garlic, sliced
  • 60 milliliters rice vinegar
  • 30 milliliters soy sauce
  • 15 milliliters sesame oil
  • 120 milliliters vegetable oil
  • 30 grams sugar
  • 60 milliliters water

Instructions

  1. Prepare the vegetables by placing the carrot, onion, ginger, and garlic into a blender.
  2. Add the liquid ingredients: pour in the rice vinegar, soy sauce, sesame oil, vegetable oil, sugar, and water.
  3. Blend on high speed until the mixture is smooth and creamy.
  4. Taste the dressing and adjust the seasoning by adding more soy sauce or sugar as needed to suit your palate.
  5. Chill before serving: transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving.

Notes

Store leftover dressing in an airtight container in the refrigerator for up to one week. Shake or stir before using.
