  • 1/2 cup creamy sugar-free peanut butter
  • 1/4 cup coconut oil, melted
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 8 ounces sugar-free dark chocolate, chopped
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the Pan: Line an 8×4-inch loaf pan with parchment paper, leaving overhang on two sides.
  2. Combine the Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, powdered erythritol, and sea salt.
  3. Create the Dough: Add the creamy peanut butter, melted coconut oil, heavy cream, and vanilla extract to the dry ingredients. Stir until a smooth dough forms.
  4. Press and Smooth: Press the dough evenly into the prepared pan and smooth the top.
  5. Chill the Base Layer: Place the pan in the freezer for 15 minutes to firm up the base layer.
  6. Melt the Chocolate: Combine the chopped sugar-free dark chocolate and coconut oil in a heatproof bowl and melt together until smooth.
  7. Pour and Spread: Pour the melted chocolate mixture over the firm base layer and spread evenly.
  8. Set the Bars: Return the pan to the freezer for 10 minutes or until the chocolate is fully set.
  9. Slice and Serve: Lift the bars from the pan and cut into 8 equal bars.
  10. Store & Enjoy: Store the bars in an airtight container in the refrigerator or freezer.
