  • 1 package of keto-friendly saltine crackers
  • 1 cup unsalted butter
  • 1 cup granulated erythritol or preferred keto sweetener
  • 1 cup sugar-free chocolate chips
  • ½ cup chopped nuts (walnuts, pecans, or almonds)
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Arrange the saltine crackers in a single layer on the lined baking sheet.
  4. Melt the unsalted butter in a medium saucepan over medium heat.
  5. Create the toffee mixture by adding the erythritol and stirring until it comes to a boil.
  6. Boil the mixture for 3 minutes without stirring, watching closely to prevent burning.
  7. Coat the crackers by pouring the toffee mixture evenly over them.
  8. Bake the toffee for 5-7 minutes until bubbly and the crackers are starting to brown.
  9. Remove the baking sheet and sprinkle chocolate chips over the toffee layer to melt.
  10. Spread the melted chocolate evenly across the toffee layer.
  11. Add the chopped nuts and a sprinkle of sea salt on top.
  12. Cool the toffee completely at room temperature or refrigerate for faster cooling.
  13. Break the toffee into pieces and enjoy or store in an airtight container.

Notes

Store any leftovers in an airtight container at room temperature for up to a week. For longer storage, refrigerate them.
