A warm and savory keto taco casserole that’s perfect for low-carb lifestyles, packed with flavorful ingredients and topped with fresh garnishes.

Ingredients

  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 lb ground beef (or turkey)
  • 1 packet low-carb taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup cauliflower rice
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Shredded lettuce, diced tomatoes, diced avocado, and cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a skillet over medium heat and sauté the diced onion for 3-4 minutes.
  3. Stir in the minced garlic and sauté for another 30 seconds.
  4. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  5. Mix in the taco seasoning, canned tomatoes, and cauliflower rice.
  6. Simmer the mixture for about 5 minutes, seasoning with salt and pepper if needed.
  7. Spread the mixture into a 9×13 inch casserole dish.
  8. Blend the sour cream and half of the cheddar cheese in a mixing bowl, then spread over the meat layer.
  9. Top with the remaining shredded cheese.
  10. Bake for 20-25 minutes until the cheese is melted and bubbly.
  11. Cool for a few minutes and garnish with shredded lettuce, diced tomatoes, avocado, and cilantro before serving.

Notes

This casserole is great for meal prep and leftovers, storing well in the fridge for up to 3 days.
