A creamy and refreshing Key Lime Cheesecake that brings the taste of summer to your table with every bite.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese
  • 1 cup sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1/2 cup key lime juice
  • Zest of 2 key limes

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs, 1/3 cup sugar, and melted butter in a medium bowl; press mixture into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese until smooth; gradually add 1 cup sugar and beat until creamy.
  4. Mix in the sour cream until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the key lime juice and lime zest until smooth.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake for 55-60 minutes, until set.
  9. Remove from the oven and let it cool completely.
  10. Refrigerate for at least 4 hours before serving.

Notes

For an extra layer of flavor, consider adding a teaspoon of vanilla extract to the cream cheese mixture.
