A classic Southern dessert combining tart key lime flavor with a creamy filling and buttery graham cracker crust.

  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tablespoon lime zest
  • 1/4 teaspoon salt
  • Whipped cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl.
  3. Press this mixture into the bottom of a 9-inch pie dish, ensuring an even layer.
  4. Beat the egg yolks in another bowl until thick and pale.
  5. Whisk in the sweetened condensed milk gradually.
  6. Stir in the key lime juice, lime zest, and salt until well incorporated.
  7. Pour the creamy lime filling into the crust and bake for 15 minutes.
  8. Cool the pie at room temperature for about 30 minutes, then refrigerate for at least 3 hours.
  9. Serve with generous dollops of fresh whipped cream on top of each slice.

Notes

Use fresh key limes for best flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
