Delightful lemon bars with a buttery crust and smooth, tangy filling, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. Mix together the flour and powdered sugar. Cut in the softened butter until crumbly. Press mixture into the bottom of the baking dish.
  3. Bake the crust for 15-20 minutes, until lightly golden.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. Pour the lemon mixture over the baked crust, spreading it evenly.
  6. Return to the oven and bake for an additional 20-25 minutes, until set.
  7. Cool completely before dusting with powdered sugar. Cut into squares.

Notes

For best flavor, use fresh lemons. Store in an airtight container in the fridge for up to a week.
