Deliciously tangy and sweet lemon bars with a buttery crust, perfect for summer gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar (for the filling)
  • 1/4 cup all-purpose flour (for the filling)
  • Zest of 1 whole lemon
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 teaspoon baking powder
  • Powdered sugar (for dusting before serving)

Instructions

  1. Prepare the crust mixture: In a mixing bowl, combine 1 cup of all-purpose flour with 1/4 cup of granulated sugar. Pour in the melted unsalted butter and stir until crumbly. Press into the bottom of an 8×8-inch baking pan.
  2. Bake the crust: Place the baking pan in a preheated oven at 350°F (175°C) for about 15 minutes until lightly golden.
  3. Create the lemon filling: Whisk together the 2 large eggs, 1 cup of granulated sugar, lemon zest, lemon juice, 1/4 cup of flour, and baking powder until smooth.
  4. Pour the lemon filling over the hot crust and bake for an additional 20 minutes until set and slightly golden.
  5. Cool and serve: Allow the bars to cool, dust with powdered sugar, cut into squares, and serve.

Notes

Serve chilled, pairs well with tea or iced lemonade. Store in the refrigerator for up to a week or freeze for three months.
