  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold butter, cubed
  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 3/4 cup milk

Instructions

  1. Preheat your oven to 425°F (220°C). Grease a baking dish to ensure those delicious biscuits slide out with ease when they’re done.
  2. Combine dry ingredients in a large bowl: mix together 2 cups of all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1/4 cup granulated sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Fold in the fresh or frozen blueberries along with 1 tablespoon of lemon zest.
  5. Mix lemon juice and milk in another bowl, then gradually add this mixture to your dry ingredients, stirring until just combined.
  6. Spoon the batter into the prepared baking dish.
  7. Bake for 20-25 minutes or until golden brown.
  8. Cool slightly before serving.
