Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 cup lemon curd

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup of sugar until well mixed.
  3. Press this mixture into the bottom of a greased 9×9 inch baking pan.
  4. Bake the crust for 10 minutes in the preheated oven.
  5. Beat the softened cream cheese and 1 cup of sugar until smooth.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Mix in the sour cream, lemon juice, and lemon zest until combined.
  8. Pour the cream cheese mixture over the cooled crust.
  9. Bake for 25-30 minutes, or until the bars are set but slightly jiggly in the center.
  10. Cool at room temperature before chilling in the refrigerator for at least 4 hours.
  11. Top each bar with lemon curd before serving.

Notes

For a unique twist, try adding a swirl of raspberry puree into the cheese mixture.
