  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Butter and flour for ramekins
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 425°F (220°C) and grease four ramekins with butter, dusting them with flour.
  2. Melt the butter in a saucepan over low heat, then whisk in the powdered sugar until smooth.
  3. Add the eggs and egg yolks, whisking until well blended.
  4. Stir in the flour, lemon juice, lemon zest, and salt until smooth.
  5. Divide the batter evenly among the prepared ramekins.
  6. Bake for 12-14 minutes, until the edges are firm but centers are soft.
  7. Cool for 1 minute, then run a knife around the edges and invert onto serving plates.
  8. Dust with powdered sugar and serve immediately.
