A classic Lemon Meringue Pie with a tangy lemon filling and fluffy meringue topping, perfect for any gathering.

  • 1 pie crust
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup lemon juice
  • 2 tablespoons butter
  • 1 teaspoon lemon zest
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Take your pie crust and mold it into a pie dish.
  3. In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in water.
  4. Cook over medium heat, stirring constantly until it thickens and comes to a boil.
  5. Reduce the heat; then, add the beaten egg yolks, lemon juice, butter, and lemon zest.
  6. Pour the filling into your prepared crust.
  7. In a clean bowl, beat the egg whites with cream of tartar until soft peaks form.
  8. Gradually add sugar, beating until stiff peaks form.
  9. Spread the meringue over the lemon filling.
  10. Bake for 10-12 minutes until the meringue turns golden brown.
  11. Allow the pie to cool before serving.

Notes

For a unique twist, consider adding a dash of lavender or rosemary to the filling.
