A vibrant Lemon Orzo Salad that combines orzo pasta with fresh vegetables and a tangy lemon dressing, perfect for picnics and gatherings.

Ingredients

  • 1 cup orzo pasta
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the Liquid: In a pot, bring water or vegetable broth to a boil and add the orzo. Cook according to package instructions, then drain and set aside to cool.
  2. Combine the Veggies: In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. Whisk the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Dress the Salad: Pour the dressing over the salad and toss to combine.
  5. Chill Out: Chill in the refrigerator for at least 30 minutes before serving, allowing those flavors to intertwine beautifully.

Notes
