Zesty Lemon Pecorino Crispy Chicken

Crispy on the outside, juicy on the inside, this chicken dish is bursting with citrusy flavor and is sure to become a family favorite!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)
  • 1 cup grated Pecorino Romano cheese
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying (about 1 cup)

Instructions

  1. Prepare your ingredients by zesting the lemons and combining the lemon juice, garlic powder, onion powder, dried oregano, salt, and pepper in a small bowl.
  2. Marinate the chicken in a resealable bag or shallow dish with the marinade for at least 30 minutes.
  3. Set up your breading station with flour, beaten eggs, and a mixture of breadcrumbs, Pecorino cheese, and lemon zest.
  4. Dredge each chicken breast in flour, then in eggs, and finally coat with the breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium-high heat until hot.
  6. Fry the breaded chicken for about 4-5 minutes on each side until golden brown and cooked through.
  7. Drain the cooked chicken on a paper towel-lined plate and serve immediately with a wedge of lemon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for the best texture.
