Deliciously creamy lemon cheesecake bars with a graham cracker crust, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well mixed. Press into the bottom.
  3. In another bowl, beat together softened cream cheese and 1 cup sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in lemon juice, lemon zest, and vanilla extract until well combined.
  6. Pour the cream cheese mixture over the crust, spreading it evenly.
  7. Drop spoonfuls of sour cream onto the cheesecake mixture, and gently swirl with a knife.
  8. Bake for 25-30 minutes, or until the center is set and slightly jiggly.
  9. Allow to cool at room temperature, then refrigerate for at least 4 hours before cutting.
  10. Serve chilled and enjoy!

Notes

Serve with fresh berries or vanilla ice cream for a delightful treat. Can be frozen for up to 3 months.
