Crispy edges and creamy centers come together in Lyonnaise potatoes, a comforting dish enhanced with caramelized onions.

Ingredients

  • 4 large potatoes, peeled and sliced
  • 2 onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat.
  2. Add the sliced onions and cook until golden brown, about 10-15 minutes.
  3. Remove the caramelized onions from the skillet and set aside.
  4. Add the sliced potatoes to the same skillet and season with salt and pepper.
  5. Cook the potatoes until golden and fork-tender, about 20-25 minutes, turning occasionally.
  6. Return the caramelized onions to the skillet and mix well with the potatoes. Cook for an additional 5 minutes.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

For crispier potatoes, soak the sliced potatoes in water for 30 minutes before cooking to remove excess starch. You can also add garlic or fresh thyme for additional flavor.
