A vibrant and velvety mango curd that captures the joyful essence of ripe mangoes, perfect for spreading, dolloping, or enjoying straight from the jar.

Ingredients

  • 2 ripe mangoes, pureed
  • 1/2 cup sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, cut into pieces
  • 1 tablespoon lime juice
  • Pinch of salt

Instructions

  1. Combine mango puree, sugar, and eggs in a saucepan over medium heat.
  2. Stir constantly until thickened and coats the back of a spoon, about 10 minutes.
  3. Strain the mixture into a bowl using a fine-mesh sieve.
  4. Add butter, lime juice, and salt to the warm mango mixture, stirring until smooth.
  5. Cool to room temperature before storing in an airtight container in the refrigerator.

Notes

Store in the refrigerator for up to a week. Can be frozen for two months; thaw in the fridge before using.
