Mango Mochi is a delightful dessert that combines the chewy texture of mochi with the sweet flavor of mango, perfect for tropical flavor lovers.

  • 2 cups sweet rice flour (mochi flour)
  • 1 cup water
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup mango puree (fresh or canned)
  • Cornstarch (for dusting)

Instructions

  1. Combine sweet rice flour, sugar, and salt in a mixing bowl.
  2. Add water gradually, stirring until smooth.
  3. Transfer the mixture to a microwave-safe dish and cover with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another minute, stir again, and then microwave for another 30 seconds until sticky and translucent.
  4. Dust a clean surface with cornstarch, place the mochi mixture on it, and let it cool slightly.
  5. Knead the mochi dough lightly and divide it into small pieces.
  6. Take a small piece of mochi, flatten it out, and place a spoonful of mango puree in the center. Fold the mochi around the filling and pinch to seal.
  7. Dust with more cornstarch to prevent sticking and refrigerate until set. Enjoy chilled or at room temperature.

Ensure the work surface is well-dusted with cornstarch to prevent sticking. The mango puree should be smooth for easy filling.
