A comforting and vibrant dish featuring tender chicken, creamy sweet potatoes, and a flavorful maple Dijon sauce.

  • 2 lbs boneless, skinless chicken breasts, diced
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat an oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed sweet potatoes, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the sweet potato pieces are evenly coated.
  3. Spread the sweet potatoes on a lined baking sheet in a single layer. Roast for about 25-30 minutes, or until they are tender and golden, turning once halfway through.
  4. As the sweet potatoes roast, heat a large, non-stick skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for 6-8 minutes, stirring occasionally, until cooked through and browned. Remove from the skillet and set aside.
  5. In a small bowl, whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper to make the maple Dijon sauce.
  6. Add the cooked chicken back to the skillet and pour the maple Dijon sauce over it. Stir to coat the chicken evenly with the sauce. Cook for an additional 2-3 minutes until the sauce is slightly thickened.
  7. To assemble the bowls, divide the roasted sweet potatoes and cooked chicken evenly among serving bowls. Add fresh spinach leaves to each bowl, drizzling any remaining maple Dijon sauce over the bowls if desired.
  8. Garnish with chopped fresh parsley for an extra burst of flavor. Serve warm and enjoy the symphony of flavors!

Notes

This dish is perfect for meal prep and leftovers taste just as good the next day. Adjust the maple syrup in the sauce to your taste.
