A delightful side dish featuring sweet potatoes coated in a sweet and savory maple-miso glaze.

Ingredients

  • 4 medium sweet potatoes
  • 3 tablespoons maple syrup
  • 2 tablespoons miso paste
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into cubes, aiming for about 1-inch pieces.
  3. In a bowl, whisk together the maple syrup, miso paste, olive oil, salt, and pepper.
  4. Toss the chopped sweet potatoes in the maple-miso mixture until well coated.
  5. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  6. Remove from the oven and garnish with chopped green onions. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
