Matcha Strawberry Cream Bars

A delightful treat that beautifully marries the earthy tones of matcha with the fresh blast of strawberries.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 1 ½ cups white chocolate chips
  • ½ cup heavy cream
  • 1 ½ tsp matcha powder
  • 1 tsp vanilla extract
  • 1 cup strawberries, chopped
  • 1 tbsp lemon juice
  • 2 tbsp sugar
  • 1 cup heavy cream
  • ½ cup cream cheese, softened
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish to prepare for the graham cracker crust.
  2. Combine graham cracker crumbs, sugar, and melted butter. Mix until fully incorporated, then press the mixture firmly into the bottom of the prepared baking dish.
  3. Bake the crust for 10 minutes until lightly golden. Set aside to cool completely.
  4. In a saucepan over low heat, melt the white chocolate chips with heavy cream, stirring gently until smooth. Stir in matcha powder and vanilla extract.
  5. Blend together the chopped strawberries, lemon juice, and sugar until chunky. In a new bowl, whip heavy cream until stiff peaks form. Fold in cream cheese and vanilla extract, then add the strawberry mixture.
  6. Spread the strawberry cream layer over the matcha layer.
  7. Refrigerate for at least 4 hours to allow the bars to set completely.
  8. Cut into bars, serve chilled, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
