Delicious bite-sized McGriddle Bites that encapsulate the beloved breakfast flavors in a fluffy, savory treat.

Ingredients

  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • 1 cup cooked sausage, crumbled
  • 1/2 cup cheddar cheese, shredded
  • 2 tablespoons maple syrup
  • 1 jalapeño, diced (optional)
  • 1/2 cup blueberries (optional)
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray.
  2. In a bowl, mix pancake mix, milk, and egg until well combined.
  3. Stir in the cooked sausage, cheddar cheese, and maple syrup.
  4. If desired, add in the diced jalapeños and blueberries to the mixture for a lovely twist.
  5. Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
  6. Bake for 12-15 minutes or until golden brown and cooked through.
  7. Let cool slightly before serving. Enjoy warm, ideal for breakfast or brunch!

Notes

Store leftover McGriddle Bites in an airtight container in the fridge for about 3 days or freeze for up to a month. Reheat in the microwave or oven.
