A vibrant and hearty Mediterranean Chickpea Soup infused with spices and colorful vegetables.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, sautéing until the vegetables are tender.
  2. Add the garlic and bell pepper, cooking for an additional 2-3 minutes until fragrant.
  3. Stir in the chickpeas, vegetable broth, diced tomatoes, oregano, cumin, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes.
  5. Taste and adjust seasoning as necessary.
  6. Serve warm, garnished with fresh parsley or cilantro.

Notes
