Ingredients

  • 1 cup quinoa or bulgur
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the quinoa or bulgur according to package instructions.
  2. Chop the cherry tomatoes, cucumber, and red onion.
  3. Let the grains cool slightly, then combine with the chopped veggies and kalamata olives in a large bowl.
  4. Crumble feta cheese on top.
