  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to a medium-high heat.
  2. Season the chicken breasts generously with salt, pepper, and dried oregano.
  3. Grill the chicken for about 6-7 minutes on each side until fully cooked.
  4. Combine the mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a large bowl.
  5. Whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper for the dressing.
