A delightful Mediterranean Pasta recipe bursting with flavors of sun-dried tomatoes, olives, and feta, perfect for a quick weeknight dinner.

Ingredients

  • Pasta (Penne, Fusilli, or Gluten-Free)
  • Sun-Dried Tomatoes
  • Minced Garlic
  • Kalamata or Green Olives
  • Feta Cheese (Crumbled)
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Fresh Basil (Optional)

Instructions

  1. Boil the Pasta: Fill a large pot with water and add a generous pinch of salt. Bring to a boil and cook the pasta until al dente. Reserve a cup of pasta water before draining.
  2. Heat the Olive Oil: In a large skillet, pour in olive oil and heat over medium.
  3. Sauté the Garlic: Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Add Sun-Dried Tomatoes and Olives: Stir in chopped sun-dried tomatoes and sliced olives and cook for 2-3 minutes.
  5. Combine Pasta and Feta: Add drained pasta and crumbled feta to the skillet, tossing gently to combine.
  6. Adjust the Seasoning: Season with salt and pepper, adding reserved pasta water as needed for desired consistency.
  7. Serve with Fresh Basil: Drizzle with olive oil and fold in fresh basil before serving warm.

Notes

For added protein, toss in cooked chicken or chickpeas. Experiment with different olives or seasonal vegetables for variety.
