A delightful Mediterranean Vegetable Lasagna layered with fresh vegetables and cheeses, perfect for family gatherings or cozy dinners.

Ingredients

  • 9 lasagna noodles
  • 2 cups zucchini, sliced
  • 1 cup bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions; drain and set aside.
  3. Sauté the vegetables in a skillet with olive oil over medium heat until tender, then add spinach and season.
  4. Spread a layer of marinara sauce in a baking dish and place three lasagna noodles on top.
  5. Layer half of the vegetable mixture, half of the ricotta, a third of the mozzarella, and some marinara sauce.
  6. Repeat the layers, finishing with the remaining noodles, marinara, mozzarella, and parmesan on top.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes

This dish pairs well with a fresh side salad or garlic bread. Leftovers can be stored in the refrigerator for up to 4 days.
