Mediterranean Tuna Salad

A vibrant and delicious salad capturing the essence of the Mediterranean with fresh ingredients.

Ingredients

  • 1 can (5 oz) tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Drain the tuna and set it aside.
  2. Cut the cherry tomatoes in half and place them in a medium-sized mixing bowl.
  3. Dice the cucumber into small pieces and add it to the mixing bowl with the tomatoes.
  4. Thinly slice the red onion and add it to the bowl.
  5. Pit and slice the Kalamata olives, then place them in the bowl with the other ingredients.
  6. Crumble the feta cheese and add it to the bowl as well.
  7. Add the drained tuna on top of the other ingredients in the bowl.
  8. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, black pepper, and sea salt.
  9. Pour the dressing over the ingredients in the large mixing bowl.
  10. Gently toss the salad with a spoon to mix all the ingredients and coat them in the dressing.
  11. Sprinkle the chopped fresh parsley over the salad for a fresh touch.
  12. Serve immediately, or chill the salad in the refrigerator for 30 minutes before serving for enhanced flavor.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Adjust ingredients based on preference.
