  • 4 ears Corn on the cob
  • 8 small Tortillas
  • 1/2 cup Mayonnaise
  • 1 cup Cotija cheese, crumbled
  • 1 teaspoon Chili powder
  • 2 tablespoons Lime juice
  • 1/4 cup Fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Grill the corn on the cob until it’s beautifully charred and cooked through.
  2. Cool slightly before cutting the kernels off the cob.
  3. Mix sweet corn kernels with mayonnaise, lime juice, chili powder, and a sprinkle of salt.
  4. Warm the tortillas on a skillet until soft.
  5. Construct tacos by placing a generous scoop of corn mixture on each tortilla.
  6. Top with crumbled Cotija cheese and fresh cilantro.

Notes
