Delightful mini cheesecakes with a twist of cinnamon roll flavor, perfect for any occasion.

Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sour cream
  • 1/2 cup cinnamon roll icing (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
  2. Combine graham cracker crumbs and melted butter in a bowl; mix until crumbly. Press the mixture firmly into the bottom of each muffin cup.
  3. Beat the cream cheese in a large mixing bowl until smooth. Add sugar and vanilla extract, and mix well.
  4. Add eggs one at a time, mixing until just combined.
  5. Stir in ground cinnamon and sour cream until smooth and blended.
  6. Pour the cheesecake batter over the crust in each muffin cup, filling them about 3/4 full.
  7. Bake for 18-20 minutes or until set.
  8. Allow to cool, then refrigerate for at least 2 hours.
  9. Drizzle with cinnamon roll icing before serving, if desired.

Notes

Serve chilled and feel free to garnish with whipped cream or extra icing.
