  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped nuts (optional)
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup powdered sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking powder, and salt in another bowl.
  5. Add the dry ingredients to the butter-sugar mixture, and stir until well combined.
  6. Fold in the chopped nuts if using.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and sprinkle mini marshmallows and chocolate chips on top.
  10. Return the cake to the oven for an additional 5 minutes, until the marshmallows are soft and slightly golden.
  11. Let cool before dusting with powdered sugar before serving.

Notes

Pair with vanilla ice cream or whipped cream for an extra treat. Store leftover cake in an airtight container at room temperature for up to 3 days.
