Delightfully moist banana bread muffins that capture the essence of home, infused with bananas and a hint of warm spices.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper muffin liners or spraying it with non-stick cooking spray.
  2. Combine the mashed bananas and melted butter. Stir until well mixed.
  3. Add the baking soda and a pinch of salt to the banana mixture, and mix until fully incorporated.
  4. Incorporate the vanilla extract and the beaten egg until blended.
  5. Sweeten the batter by gradually adding the sugar and mixing continuously.
  6. Fold in the flour carefully to keep the batter slightly lumpy.
  7. Add the optional walnuts or pecans, ground cinnamon, and nutmeg for extra flavor.
  8. Fill the muffin cups about 2/3 full with batter.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

For best results, use overripe bananas and avoid overmixing the batter.
