Ingredients

Scale
  • 1 1/2 cups warm water
  • 2 tablespoons granulated sugar
  • 2 teaspoons salt
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 1/4 cup baking soda
  • 1 large egg
  • Coarse sea salt
  • 8 ounces mozzarella cheese, cut into sticks
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Combine warm water, sugar, and yeast in a mixing bowl. Let sit for about 5 minutes until foamy.
  2. Add salt and flour to the yeast mixture and mix until a dough forms. Knead until smooth, about 5 minutes.

  4. Preheat the oven to 425°F (220°C).
  5. Bring 10 cups of water and baking soda to a boil in a large pot.
  6. Divide the dough into pieces, flatten each piece, and place a mozzarella stick inside. Shape into pretzel forms.
  7. Boil each pretzel in the baking soda water for 30 seconds, then remove and place on a baking sheet.
  8. Brush each pretzel with egg wash and sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes until golden brown.
  10. Brush with melted butter before serving.
