  • 100g unsalted butter, melted
  • 400g cream cheese
  • 100g powdered sugar
  • 300ml heavy cream
  • 300g mixed berries (strawberries, blueberries, raspberries)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Biscuit Base: Crush the digestive biscuits in a bowl and mix with melted butter until combined. Press the mixture into the base of a springform pan to form a crust.
  2. Beat the Cream Cheese Filling: In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  3. Whip the Heavy Cream: In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture along with the vanilla extract.
  4. Assemble the Cheesecake: Pour the cream cheese filling over the crust and smooth the top.
  5. Top with Fresh Berries: Scatter mixed berries on top of the cheesecake.
  6. Chill Until Set: Refrigerate for at least 240 minutes or until set.
  7. Serve Chilled: Serve chilled for a refreshing treat.

For best results, ensure cream cheese is at room temperature before mixing. Store leftovers in the refrigerator for up to 3 days, or freeze individual slices for up to a month.
