Delightfully creamy and refreshing, these no-bake blueberry cheesecake bars are a perfect summer dessert that showcases fresh blueberries atop a rich cream cheese filling.

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2 cups blueberries
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Create your crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture firmly into the bottom of a 9×9 inch pan.
  2. Prepare the cream cheese mixture by beating softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Whip the heavy cream in a separate bowl until soft peaks form.
  4. Combine the whipped cream into the cream cheese mixture and gently fold in the blueberries.
  5. Spread the cream cheese mixture evenly over the crust.
  6. Refrigerate for at least 240 minutes (4 hours), or until set.
  7. Top with reserved blueberries and slice into bars before serving.

Notes

Make sure your cream cheese is at room temperature for a smooth filling. Letting it chill overnight improves texture.
