Quick and easy no-bake coconut cookies made with shredded coconut, peanut butter, and a hint of chocolate.

  • 1 cup oats
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Mix the dry ingredients: In a bowl, mix together shredded coconut, oats, cocoa powder, and nuts if using.
  2. Combine the wet mixture: In a separate bowl, combine peanut butter, honey, and vanilla extract until smooth.
  3. Mix the wet and dry ingredients until fully combined.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes or until set.
  6. Enjoy your no bake coconut cookies!

Notes

For better control over sweetness, use unsweetened shredded coconut. Can substitute honey with maple syrup for a vegan option.
