A light and refreshing no-bake dessert combining tart lemon and sweet blueberries.

  • 1/2 cup powdered sugar
  • 1 cup blueberry puree
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 pre-made graham cracker crust
  • Fresh blueberries for topping

Instructions

  1. In a mixing bowl, beat the softened cream cheese with powdered sugar until smooth.
  2. Gently fold in the whipped cream until well combined.
  3. Add the blueberry puree, lemon juice, and lemon zest, and mix until incorporated.
  4. Pour the mixture into the graham cracker crust and smooth the top.
  5. Refrigerate for at least 240 minutes or until set.
  6. Once set, top with fresh blueberries before serving.

Notes

Ensure cream cheese is completely softened for a smooth mixture. You can use homemade blueberry puree by blending fresh or frozen blueberries.
