A light and zesty potato salad made without mayonnaise, featuring creamy Greek yogurt and fresh ingredients for a refreshing twist.

Ingredients

  • 2 pounds of potatoes
  • 1/2 cup Greek yogurt
  • 1 tablespoon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar

Instructions

  1. Boil the potatoes in salted water until tender, then drain and let cool.
  2. Chop the potatoes into bite-sized pieces.
  3. Create the dressing by mixing together the Greek yogurt, mustard, apple cider vinegar, salt, and pepper in a large bowl.
  4. Combine the potatoes, celery, red onion, and parsley into the bowl.
  5. Toss gently until well combined, being careful not to mash the potatoes.
  6. Serve chilled and adjust seasoning if necessary.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
